Good question. For that matter, why is almost everyone in the movie white? I think it has t odo with the fact that Mel Gibson is a Nazi at heart.
Yeah he did return from the dead. Next time we need to get the job done right. And Jesus is apparently of all races so white is as good as any color.
Plus mel gibson is white and this is just a movie about him using jesus as a vehicle.

Considering that this is a spring/rebirth/reproduction festival (wait until you realize what the maypole represents) and Bunnies are well known for their reproductive capabilities, AND no one want to think of toads and snails having "relations" then the answer is obvious.
Plus Evil has to be cute.
