If you are talking about your choice of flags, your email, etc, go to the settings section from your nations screen. If you are talking about the questioins you answered, by answering issues a certain way, your national description and UN catagories will change.

Nothing that you choose when you create your nation is permanent, except the name, which cannot be changed, and the date you joined.
