If I've had a bunch of laws automatically applied because I joined the UN, do they get un-applied when I leave the UN?

The Compliance Ministry enforces only the resolutions that pass while you are a member.
The effects do not go away.

So, because of that, if you don't want a particular resolution to be implemented in your nation for always and eternity, you should leave the UN temporarily while it is passed - then re-join.
