Is it the UN ranking table that says you're still there? Because as the table only updates once a day, nations who move to another region will still be on the previous region's league table until it updates

That's right, the UN rankings are updated only once each day, not in real time. You will have to wait a few hours, then you will be ranked for some other attribute within your new region, and will disappear from your old region's rankings.
Also if you are the founder of a region and you leave your nation will still be displayed as the founder of the region.
