There already is such a committee, the NationStates Olympic Council (http://forums.jolt.co.uk/showthread.php?t=468317), and several Olympic Games have been held (you can sign up for the Third Winter Olympics (http://forums.jolt.co.uk/showthread.php?t=528644), which will be held soon).

The Grand Duchy of Dutchydom will of course participate. We are a small area growing in numbers and pride, so at this time we will not place our bid for hosting the games but that may change in the future.
